While growing up, I remember my aunt making beautiful cakes and how the aroma of baked goods would fill the house. I had the best birthdays because we always anticipated what theme our cake was going to be. Now that I have my own kids, I do the same for them; however, on a healthier note with a little less sugar.
I remember taking my son to his first birthday party, and they had these pretty cupcakes with mounds of icing on top. The kids gobbled them up and the sugar went straight into their systems. Imagine 10 kids gone crazy, bouncing off the walls. This was something I witnessed party after party and when it came for his turn to have his birthday party, I made sure not to serve those sugar loaded cupcakes.
I scoured the internet looking for healthier alternatives and found tips on how to substitute sugar or how to omit a portion of sugar while still retaining the great taste. After years of trial and error, I've found a balance with both the cake itself and more importantly, the icing. Instead of a bite of traditional, sugar-laden butter cream, my cupcakes are topped with a vanilla whip. It's texture and taste is very similar to whipping cream.
My kids love it and so does my mom, a diabetic, who can still have one occasional cupcake and not have the sugar spike.
